What is your favorite type of Breakfast Meat?
When I was in college, I started working at Chick-Fil-A (a restaurant in the South Eastern United States). I really liked the job, and working the 5 am shift before my classes started to turn me to actually liking breakfast food.
Now, like the rest of America, I am thoroughly obsessed with bacon. I also love hashbrowns, pancakes, waffles, sausage, you name it...I love breakfast foods, but I generally don't make them for actual breakfast - for example I made this recipe for my lunch instead. :)
While I was working at Chick-Fil-A, however, my options were limited as to what I could eat, since their morning specialty was fried chicken biscuits (delicious if you've ever had one), but because of my gluten allergy I couldn't get those during my meal break. So, I improvised - they had sausage burritos on the menu. When my breaks would come, I started ordering the sausage burrito without the tortilla. It took the kitchen a few tries to understand that I just wanted the ingredients in a bowl, but eventually they got it and knew when they saw an order for a sausage burrito without the tortilla that it was my morning meal and made it great every time!
This recipe for a sausage breakfast bowl is based off of what I would order at Chick-Fil-A for my meal break. It can also be subbed for bacon or chicken if you don't like sausage!
To this day, a sausage burrito breakfast bowl is definitely one of my favorite fast meals, whether it actually be for breakfast or if it is a lunch meal on the go. This dish is great for multiple reasons - one of them being the amount of flavor, in addition to the protein you get from the eggs and sausage. Everybody knows that eggs are really filling - so if you have it in the morning, you will be full during the morning and may be less likely to snack! (unless you're me, and there's chocolate on everyone's desk at work :) )
This recipe is also really great because you can mix all kinds of stuff into it to spice it up a little bit more. Below I have outlined the recipe I followed with suggested additions to the end to help create a sausage breakfast bowl customized just for you. I hope you enjoy!!

Ingredients
- 2 eggs
- EITHER 2 Jimmy Dean precooked sausage patties, chopped,, or your preferred brand of sausage
- OR 4 strips of bacon, crumbled, (or you can do both if you like meat)
- 1/4 cup milk or milk alternative, (I used Almond Breeze
- 1 tsp paprika
- about 1/4 cup vidalia onion, chopped
- shredded cheddar cheese, to taste
- salt and pepper, to taste
- fresh parsley, for garnish
- oil, for sauteing the onions
- In a saucepan or skillet on medium heat, place just enough oil to coat the bottom. Throw in chopped onions and sautee until slightly brown.
- While the onions are cooking, in a small bowl whisk together the milk and egg until the milk is well incorporated. Set aside.
- Add in the sausage with the onions and cook for 1 or two minutes until warm. Remove from pan and place in a heatsafe bowl. Set aside.
- Pour egg mixture into the pan. Add any spices you would like (this would include salt, pepper, paprika, cayenne pepper, etc) and scramble the eggs. If you don't know how to scramble - here's how you do it: let the eggs cook for about 10 seconds. They will still be runny on top but starting to turn opaque on the bottom. Using a spoon or spatula, scrape the eggs off the bottom of the pan. Then, let sit for another ten seconds and scrape again, repeating this until there is no liquid left.
- Toss the onions and sausage back into the pan and sautee with the eggs for a minute. Add cheese and stir till melty.
- Transfer to a plate or bowl. Drizzle with your favorite breakfast topping and garnish with parsley if desired. I did maple syrup in this recipe, but strawberry jelly or Chick-Fil-A sauce (if you happen to have one lying around) tastes great on it too! My boyfriend likes stuff like this with ketchup so that's an option too.

Luckily, this type of recipe presents many different ways to prepare it to suit your individual tastes, whether you like it sweet, salty, or spicy. I myself prefer it a little sweeter, so I top mine with maple syrup.
Check out the table below for some mix-and-match ideas. I have separated the ingredients by what stage you can try adding them in at. A lot of the crunchier vegetables, such as peppers, or food that needs a little more cooking, such as hashbrowns, will need to be added on earlier in the recipe. Softer, leafy vegetables should be added in later after the eggs are already cooked because they really just need to be warm and can overcook easily.
*** NOTE: If you choose to use tomatoes, I recommend dicing them first, then salting them a little to remove some of the moisture before cooking them with the rest of the ingredients to prevent a bit of the wateriness that comes with tomatoes.
